Chocolate waffles with maple ricotta and berries

It is Sunday!!!..my favorite day of the week!..and to celebrate it we had a rich, chocolatey, sweet breakfast. Once a week or every now and then it can't be bad!!!..isn't it?

I love waffles, and chocolate and berries, so they are here, all together. With a  Ricotta cheese  that was sweetened with maple syrup. For me perfect.


Ingredients:

For 2 to three small waffles:

1 cup of pancake mix (I used whole wheat )
1 egg
1 1/2 cup of milk
1/4 cup of vegetable oil
1/2 cup of cocoa
1 tsp. vanilla

Maple Ricotta:

1 cup Ricotta cheese
2 Tbsp. Maple syrup
1 tsp. vanilla
1/4 tsp. ground cinammon.

Assorted berries cut in halves or quarters, or any  other fruit of your choice.

Step 1:

Mix the pancake mix, milk, egg and oil just as the directions of the package say. Add the 1/2 cup of cocoa. If the mixture is more dense or dry, add milk little by little until it reaches the desired consistency of pancake batter, not to runny not to dense.


Put in your waffle maker and bake a waffle!

Step 2:

Mix the ricotta, maple syrup, vanilla and cinammon. Taste for desired sweetness and reserve.

Step 3:
Now you have your three components

 easy!!

Step 4 :
Plate. Arrange a generous scoop of ricotta on toop of the waffle, and the berries on top. Drizzle a little of maple syrup on top ..and..READY!!


It looks soooo!! pretty!!!!...and the texture with the whole wheat mixture is almost as a brownie, but healthier!, and the contrast between the sweetness of the maple ricotta cheese, the tartness of the berries and the chocolate of the brownie makes it the perfect sunday leisure breakfast!!
